5 Things About This Mom

The MommyFest blog party is well under way and I am having a blast meeting new mommy bloggers!  There are contests going on as well- which you can check out at MommyFest.  Today I am entering a contest to win a $20 Amazon gift certificate.  All I have to do to enter to win is post “5 Things About This Mom.” 

So, here’s my 5 things:

  1. Ever since I can remember I have wanted to be a mommy.
  2. I always assumed that when I was ready to have children it would be easy to get pregnant.  But after several years of trying to get pregnant and having two miscarriages I felt ready to give up on my dream of being able to have children.
  3. After lots of praying and finding an amazing doctor- who was able to help us through my PCOS, endometriosis, thyroid issues, low levels of hormones needed to maintain a pregnancy, and several other problems- I was able to get pregnant with Hailey.
  4. Being a mommy to Hailey has definitely changed my life- for the better of course.
  5. Even after 19 months sometimes I still look at Hailey and just can’t believe that my dream of being a mommy finally came true!

Random Recipes- Lunch Edition

Random Recipes

This week for the Random Recipe exchange Pam asked us to share a lunch recipe.  My most common lunch
recipe would have to be- open a can of soup, add some water and cook. While the soup is cooking, get 2 pieces of bread out, add some ham, cheese and mustard or mayonnaise.  But, I’m pretty sure that’s now what Pam had in mind for this exchange ;)

So, here is my recipe for lunch.

Cheeseburger Loaf

Ingredients:
1 pound ground beef
1/4 cup chopped onion
1 can (10-3/4 ounces) condensed tomato soup, undiluted
1/2 teaspoon garlic salt
1/4 teaspoon salt
1/4 teaspoon pepper
1 loaf (1 pound) unsliced French bread
1 tablespoon butter, softened
8 ounces process American or Mexican-flavored cheese, sliced


Directions:

In a large saucepan, cook beef and onion over medium heat until meat is no longer pink; drain. Add soup, garlic salt, salt and pepper; simmer, uncovered for 5-10 minutes.

Meanwhile, slice the top third off the bread. Hollow out bottom half of loaf, leaving a 3/4-in. shell (discard removed bread or save for another use). Spread butter on cut side of bread. Place loaf on an ungreased baking sheet and broil 4-in. from the heat until lightly browned.

Spoon beef mixture into shell; arrange cheese slices on top. Broil 2-3 minutes longer or until cheese is melted. Replace bread top. Yield: 6-8 servings.

He Has a Way With Words

I have a pimple on my forehead.  And it is a big one.

So, today Rich looks at me and says, “Man, that thing is huge.”  I wasn’t exactly sure how to respond to that, so I didn’t say anything.  I guess because of my silence Rich thought he should say some more.  “I was looking at it earlier and I was thinking ‘wow, that pimple is big.’”

At that point he must have realized what he had said because then he added, “Well, that’s not really what I mean.”

Oh?  What is it that you mean?

What’s For Dinner?

The other night Rich and I were discussing what to have for dinner.  My menu plan had called for marinated Chicken, but I had forgotten to marinate it.  So, I went through my menu plan for the rest of the week telling Rich what his choices would be for that night.  When I got to Sunday I told him that the menu plan said, “I have no idea, I won’t be doing any cooking.”

Rich said, “Why?  Why aren’t you cooking?”

“It’s Mother’s Day.  I won’t be doing any cooking.”

“Oh, it is?  It’s Mothers Day?”  He asked.  “Who is going to do the cooking?”

Ummmm- I don’t know, but it won’t be me.
