So, here are my top five picks:

1. Pam at Random Thoughts- Pam has an awesome blog where she talks about anything and everything that goes on in her life.  She is so open about her thoughts and feelings and her posts often reflect the same feelings I have as a wife and mommy.
2. Nutty Gal at Nutty Gal’s Waffles- Nutty Gal blogs about her life as a single mom to her 6 month old baby girl and talks about her day to day life.  She always has something fun going on at her blog!
3. Sharon at Sit With Me Awhile- Sharon always has some amazing spiritual advice.  I know I can usually get a good devotional when I visit her blog.
4. Regina at Regina’s Family Seasons- Long, long ago I saw Regina everyday at this terrible little place called work.  I learned more from working with her than I did in all of my years in college and working with her made the days fun… well as fun as they could be considering our circumstances.  So, now we keep in touch through blogging and she has an amazing blog!
5. Zamejias at MakiMeji- Zamejias has a lovely blog where she talks about her day to day life.  She always adds a bit of humor and I know I can count a smile when I visit her.

Okay- that was really hard.  It took me a really long time to pick 5 people because I really love everyone on my blogroll.  I don’t want to make anyone feel bad by not including them so this was really hard for me to pick just five.  But, I had to follow the rules on this one.  And I’m tagging the people I picked for my top five, except of course the ones who have already done it.

It’s time once again for the Random Recipe Exchange.  Stop on over at Pam’s blog if you want some more information about the fun Random Recipe Exchange.

This week we are sharing a Tex-Mex recipe.  Now really, we hardly ever eat Tex-Mex food.  And it’s not because we don’t like it, I just don’t have a lot of Tex-Mex recipes.  So, I am really excited to see what the other participants share so I can get lots of new recipes to try.

Here’s my recipe:

Taco Salad 

Ingredients:

• 1 pound lean ground beef
• 1 (1.25 ounce) package taco seasoning mix
• 1 (16 ounce) can chili beans
• 1 (16 ounce) bottle French dressing
• 1 head iceberg lettuce
• 1 (14.5 ounce) package tortilla chips
• 2 cups shredded Cheddar cheese
• 1 cup chopped tomatoes
• 4 tablespoons sour cream
• 1/2 cup prepared salsa

Directions:

In a large skillet over medium-high heat, brown the ground beef and drain excess fat. Stir in the taco seasoning, chili beans and French-style dressing. Fill the dressing bottle 2/3 full of water and add to the skillet. Bring to a boil, reduce heat and simmer for 15 minutes.

Crush the bag of chips, open the bag, and toss the broken chips into a large bowl with the lettuce, cheese and tomatoes. When the meat mixture is done, combine it with the lettuce, tomatoes, chips and mix well. Then, add salsa and sour cream.

Makes 6 servings

The other day I was cleaning Hailey up after one of her very messy meals.  Rich announced, “I’m going to get the vacuum.” 

I thought that was odd- since in all of years I have known him he has never said such a phrase.  But I was pretty excited anyways- hoping maybe this was a new beginning.

So about a minute later he came back with Dottie, the doggie vacuum.  Ahhhh- now that makes sense.

Today Hailey and I went to a St. Patrick’s Day party with the mommy group we’re involved in. We had a blast, so I had to share a few pictures.

This was soon after we got there- Hailey had to stand back for a few minutes and take it all in.

Hailey loves coloring, so this craft was great.  Actually she loves taking the crayons and markers in and out of the containers more than she likes the actual coloring part.

I know Hailey looks a bit sad here, but she wasn’t at all.  I think she was once again taking it all in. 

Hailey loved playing with her friends and we had a great time.  And of course I loved having other moms to talk to.  After we got home she insisted on wearing her St. Patrick’s Day necklace and lei. They kept her busy for most of the afternoon while she put them on and off herself and her dolls.
