Potato Salad is my favorite and of course I cannot just stop at one serving. UGH

We used to make something like that at one of the restaurants I worked with. The only difference is that we would use tasso and add a little liquid smoke to the sauce.
And in our area sometimes we boil the potatoes with a little crab boil for some added punch.
